Nutty Granola Recipe


 
I don’t usually do breakfast. Most of the time, it’s a cup of coffee keeping me going until I realise I’m hungry and dead tired and will eventually require sustenance. That’s what I love about granola though – it keeps me full, it’s so light that I don’t feel like I’ve stuffed myself and I can just keep going with my day. If you’re a clever person, you can make it ahead of time and just pull it out of the pantry in the morning, ready to eat like cereal. Unfortunately, I’m terrible at planning so I tend to take an hour making and waiting for it to be ready on the morning’s that I find myself craving it. It’s worth it in the end though.

You can use any ingredients to suit your tastes but most granola is made up of grains (usually oats), nuts, seeds, dried fruits and served with yoghurt. Being a baker, I tend to collect nuts so it’s a great way to use up whatever is sitting in the pantry. And being a mum, it’s a great way to get the kids in the kitchen because you can’t really go wrong chucking everything into the one bowl. My nine-year-old remarked that the mixture reminded her of muesli bar mix and she’s right – it does, it’s just drier. But who in their right mind gets filled up on just one muesli bar for breakfast anyway?
 

Easy Nutty Granola Recipe


 
¼ cup almonds
¼ cup cashews
¼ cup macadamias
1/8 cup pistachios
1/3 cup oats
1/8 cup sesame seeds
¼ cup shredded coconut
2 tbs oil (coconut, olive, canola or rice bran)
1 tsp butter
1 tsp rice malt syrup
1 tbs honey
Dash of ground cinnamon
1/3 cup dried fruit (sultanas, chopped dried apricots/figs/dates/pears/mixed peel)
Yoghurt and fresh fruit, to serve
 

1.       Preheat oven to 100oC and line a baking tray with baking paper. Roughly chop the nuts. Stir in the oats, sesame seeds and coconut.

2.       Heat a small saucepan over low flame, add oil and butter. When butter has melted, add rice malt syrup, honey and cinnamon. Stir until mixture is combined and browned.

3.       Quickly stir the syrup through the oat mixture until fully coated. Spread mixture out thinly on the lined baking tray. Bake in the oven for 45mins, stirring half way through.

4.       Remove from oven and let cool. Granola will harden on standing. Crumble granola into serving bowls and top with yoghurt and fresh fruit. Or store in an airtight container for up to a week.
