Chocolate Oreo Cupcakes Recipe

Nothing screams “EAT ME!” like chocolate cake. It’s one of those late night (or midday) indulgences that you tell yourself is a one-off treat but, really, we know seconds and thirds will always be in order. The plethora of chocolate cake ideas lend their way to delightful different avenues of heaven: gooey brownies, creamy cheesecakes, fluffy mousse cakes and nutty chocolate slabs. Unfortunately, I’m a parent and my zeal to recreate such treasures is marred by the reality that the little hyper bunnies bopping around my kitchen will want to pitch in and, in turn, rip apart my kitchen like Freddy and Jason on steroids. I’m not kidding, most of our kitchen adventures result in my benches looking like I used the blender without a lid. And I rarely use my blender.

The faster we get through out kitchen experiment; the sooner I can clean up the error of my ways. Fortunately cake helps dull the pain and with an Oreo nestled snuggly as the base of these little beauties, it sure makes it all worth it. The little smiles, messy fingers and chocolate icing are a bonus too.

Chocolate Oreo Cupcakes

Makes approx. 24 regular sized cupcakes

200g butter, softened
½ cup brown sugar
2/3 cup caster sugar
1 tsp vanilla essence
2 large eggs
½ cup cocoa powder
1 tsp bi-carb soda
1 cup self-raising flour
¾ cup buttermilk
2/3 cup plain flour
2 packages of Oreos (I made one tray with peanut butter flavour and one tray with strawberry but you can use any or just stick to original)

Frosting and additional Oreos, for decorating

1.       Preheat oven to 160oC (140oC fan forced oven). Add liners to two cupcake trays.

2.       In a large mixing bowl, beat butter, sugar and vanilla until creamy. Add the eggs, one at a time, and beat well until fully incorporated.

3.       With a spatula, gently fold in the cocoa powder and bi-carb soda. Add half a cup of the self-raising flour and fold in gently until no longer visible. Stir in the buttermilk, then add the remaining self-raising flour and plain flour.

4.       Add an Oreo to each of the cupcake liners. Then spoon a heaped tablespoon of cake mix on top of the Oreo. Repeat until all liners are filled.

5.       Bake in the oven for 18-20mins, or until a skewer inserted in the centre comes out clean.

6.       Remove from oven and let cool in trays. Decorate with chocolate icing and crushed Oreos.
